A Holiday Tradition!
Decorated Gingerbread Cookies
1 cup butter, 3/4 cup brown sugar, 1 large egg, 1/2 cup molasses, 2 tsp pure vanilla,
3 1/4 cup flour, 1/2 tsp. baking soda, 1 tsp baking powder, 1/4 tsp salt, 1 tsp cinnamon, 2 tsp ground ginger, 1/4 tsp ground cloves, 1/4 tsp nutmeg.
Cream butter and sugar for about 2 minutes. Add egg and vanilla and molasses and beat until smooth. Add flour & dry ingredients including all spices. Mix on low speed until just combined, don't overbeat or dough will become tough. At this point, you may chill the dough wrapped in saran wrap for up to a week, or just go ahead and roll out. Using lots of flour, roll dough to 1/4 inch thick. Cut using gingerbread boy cookie cutters and bake for 10-12 minutes at 325 degrees.
Roll dough thicker for softer cookies. Decorate with your favorite icing and piping bag after cooling.
