HO HO Brownies
Yummy chocolate treat great for a crowd!
1 cup water, 1/2 pound butter, 1/4 cup cocoa
Place above ingredients in medium saucepan and boil ( low boil) until slightly thick, then cool to lukewarm.
Mix together the following dry ingredients:
2 cup sugar
2 cup flour,1 tsp.Baking Soda,1 tsp. Vanilla,1/4 tsp. Salt
Add 1/2 cup Buttermilk
Add to lukewarm cocoa mixture and mix until smooth.
Spread into jelly roll pan ( I use 18x12 cookie sheet with 1 inch sides). Spray with Pam or lightly grease first. Bake 350 degrees 20 minutes.Filling:
Beat 2 cup Confectioner's sugar, 1/2 cup Crisco shortening,( you could use butter here, but the shortening is lighter and more authentic for the childhood treat of Ho Ho's) and a dash of salt.
Add 1/2 cup milk, 1 TBL. water and 2 tsp. vanilla for 5 minutes until light and fluffy. Add additional 1 1/2 cup confectioer's sugar and beat well. Spread on COOLED brownie layer, chill while you make the frosting.FROSTING:
In small saucepan, Boil 1 cup sugar, 6 TBL Butter, 6 TBL milk for 1 1/2 minutes. Stir in 3/4 cup Semi-sweet chocolate chips and beat whil cooling in a bowl of ice water. * Add more butter or more milk if needed to achieve proper consistency. The mixture should be spreadable, thick and shiny. Spread over chilled white filling on cake. Cover pan with foil and chill until ready to serve.
