Orange Cream Cookie
A perfect summertime treat, a soft, cakelike cookie!
2/3 cup Crisco shortening, 3/4 cup sugar
1 egg, 1/2 cup orange juice
2 Tablespoons grated orange rind, 1 Tablespoon pure vanilla
2 cups flour
1/2 teaspoon baking powder,1/2 teaspoon salt
1/2 teaspoon baking soda
Cream shortening and sugar. Add egg & beat until smooth. Stir in juice, rind and vanilla. Add dry ingredients and blend in. Do not overbeat. Drop on ungreased cookie sheet and bake at 375 degree oven to 8-10 minutes. Frost with orange icing.Icing: Add 2 Tablespoons melted butter to 2 cups of confectioners sugar. Add orange juice until smooth enough to spread. Frost cookies while slightly warm.
