INGREDIENTS:
1/2 cup plus 2 Tablespoons soft butter
1 3/4 cup packed brown sugar
1 egg
1 teaspoon pure vanilla
2 cups flour
1/2 teaspoon baking powder
1 cup chopped pecans
Combine 2 Tablespoons butter, 1/2 cup brown sugar and pecans and set aside. In mixer bowl, blend 1/2 cup butter, 1 1/4 cup brown sugar, 1 egg, vanilla, flour and baking powder. Stir in pecan mixture. Shape into balls and place on ungreased cookie sheet. Flatten slightly with glass dipped in sugar. Bake in 375 degree oven for 8-10 minutes.
As with any cookie, be careful to not overbake.
