Great cookie with a cup of coffee or tea! Soft and crinkly with sugar
3/4 cup Butter
1 cup Brown Sugar
1 whole egg
1/2 cup molasses
2 1/2 cups all-purpose flour
2 tsp. baking soda
1 tsp. cinnamon AND 1/2 tsp. ginger
1/2 tsp. salt
1/2 tsp. nutmeg
Cream butter and brown sugar well. Beat in the molasses and then the egg and beat well. Add dry ingredients and mix until blended. Do not overmix at this point. Cover dough with saran wrap and chill until firm, 1-2 hours.
When ready to bake, preheat oven to 350 degrees. Scoop dough using small ice cream scoop or large spoon and roll in a bowl of white sugar, forming a ball. Bake on cookie sheet ( We use parchment paper, Pam with flour will work fine) for 10-15 minutes.
